摘要:本课题是对特殊医学用途全营养配方食品能量乳的工艺路线进行配套设计,对全营养乳剂加工产品做一个基础的一个工厂设计,并利用所查的文献得到的数据以及根据事实条件对全营养能量乳加工厂的工艺流程、全厂布局、水电气估算、环境卫生、以及成本预算进行合理的可行的布局和制定。全营养能量乳不但有广阔的市场前景还有丰富的营养价值。随着特殊医学配方食品市场在国内的不断扩大,以及国内经济的不断发展,对特医食品加工的工艺的要求在也越来越高,本文设计的重点在于工厂内各设施的合理布局,工艺流程的安全性和适当性,希望使得国内特殊医学用途配方食品产业能够越来越规范、开速发展。

Abstract:This design is to complete the design of the technological route of the complete nutrition formula food energy milk for the special medical use. In addition to making a basic factory design for the processing products of total nutrient emulsions, the process flow, plant layout, water and electricity estimation, environmental sanitation, and cost budget of the total nutrition energy milk processing plant are also reasonably feasible and developed according to the data obtained from the literature and the factual conditions. The total nutrition energy milk not only has the broad market prospect, but also has the rich nutrition value. With the continuous expansion and development of special medical formula food market in China and the continuous development of domestic economy, people#39;s demands on special medical food processing technology are also increasing. Therefore, this thesis focuses on the reasonable layout of plant facilities, the safety and appropriateness of the process flow, which also hopes that the domestic special medical use of formula food industry can be more and more standardized and rapid development.

1.1.引言
在20世纪80年代后期,特殊医学用途配方食品打开中国的大门,初次应用于临床。特殊医学用途配方食品是为了满足进食受限、消化吸收障碍、代谢紊乱或特定疾病状态人群对营养素或膳食的特殊需要,专门加工配制而成的配方食品。[1]该类产品必须在医生或临床营养师指导下,单独食用或与其他食品配合食用。特殊医学用途配方食品的应用在改善病人营养状况,促进病人康复,缩短住院时间,节省医疗费等方面发挥了巨大作用。包括全营养配方食品、特定全营养配方食品和非营养配方食品。[2]
1.2.了解特殊医学用途全营养配方食品
全营养配方食品,可作为单一营养来源满足目标人群营养需求的特殊医学用途配方食品。一般使用人群是想通过该类食品来加强营养补充,获取营养支持,并没有特殊营养素的需求,如:体弱、长期营养不良、偏食、长期卧床患者,老年人等长期营养素摄入不足的人群。患者应在医生或临床营养师的指导下选择使用全营养配方食品。[2]
