摘要: 本设计主要是进行年产2000 t香肠火腿肉制品的工厂设计。为了提高肉制品的加工水平，并且满足市场需求，我设计出了一个比较合理规范化的肉制品加工厂。首先，我们需要在了解资源和市场需求的基础上，制定了可行性研究报告;其次对生产车间进行了物料和能量的衡算;同时我们也引进了国际先进的加工设备和加工工艺，并对设备进行筛选，工艺进行优化，大大的提高了产品的质量并保证了产率;再者，本设计也考虑到工厂的选址、布局，所需劳动力等多种问题，也对其做了初步的设计方案。同时根据信息绘出工厂总平面布局图、生产工艺流程图、车间平面布置图、设备生产流程图、车间水气路图。最后，本设计还做了必要的经济技术的分析。整个设计充分考虑了目前的经济状况和今后发展的需要，目的是为了设计出符合要求的香肠火腿肉制品加工工厂。

Abstract：This design mainly carries out the factory design of 2,000 t sausage ham meat products per year. In order to improve the processing level of meat products and meet the market demand, I designed a more reasonable and standardized meat processing plant. First of all, we need to formulate a feasibility study on the basis of understanding resources and market needs; second, we have accounted for materials and energy in the production workshop. At the same time, we have also introduced advanced international processing equipment and processing technology, screened and optimized the equipment, greatly improving the product. The quality and productivity are guaranteed. In addition, this design also takes into account a variety of problems such as the location and layout of the factory and the labor required, and also makes a preliminary design plan for it. At the same time, according to the information, the total layout diagram of the factory, the production process flow chart, the workshop plan layout diagram, the equipment production flow chart, and the workshop water and gas road map are drawn. Finally, the necessary economic and technical analysis is also made in this design. The whole design takes full account of the current economic situation and the needs of future development. The purpose is to design a sausage ham meat processing plant that meets the requirements.

近年来,受肉类原料价格波动、产品结构老化和人们消费观念变化等因素影响，我国加工肉制品行业总体出现了营业额、利润增速双放缓的局面。
