银杏白果及植物蛋白饮料发展与研究现状
摘 要
随着生活水平的提高和人们健康意识的增强,植物蛋白饮料也越来越受到消费者的青睐。与主要软饮料类型相比,植物蛋白饮料具有绿色、营养等优势。
要做好白果乳饮料的工厂设计,首要了解的是银杏白果国内外的研究现状,包括其化学成分、功能性质及制作工艺。同时对于植物蛋白饮料产业,也需要掌握其发展方向与趋势,将消费者的需求与目前的研究发现相结合,为后期的设计工作打下知识基础。

ABSTRACT
With the improvement of living standard and the enhancement of people#39;s health consciousness,vegetable protein drinks are also more and more popular with consumers.Compared with the main soft drinks, vegetable protein drinks have the advantages of green and nutrition.
In order to do a good job in the factory design of ginkgo biloba milk beverage, the first thing to understand is the research status of ginkgo biloba at home and abroad,including its chemical composition, functional properties and fabrication process.At the same time, for the plant protein beverage industry, it is also necessary to master its development direction and trend, combine the needs of consumers with the current research findings, and lay a knowledge foundation for the later design work.
