摘 要

菊芋(Jerusalem Artichock)又名洋姜、鬼子姜,多年生草本菊科植物,属于我国特色农业作物,其土壤适应性强,可在滩涂盐碱地、沿江湿地、丘陵山区、干旱区等非耕边际土地种植。菊芋块茎富含菊粉,是植物的第二大储存多糖,仅次于淀粉。作为菊芋菊粉重要精深加工的发展方向,低聚果糖FOSs通过菊粉内切酶降解菊粉分子内的beta;(1→2)糖苷键,从而获得高附加值的果寡糖。作为益生元的代表,低聚果糖是天然的水溶性膳食纤维,不产生沉淀问题。使用菊粉作为纤维配料十分方便,能改善使感官特性,帮助人体获得更平衡的饮食,因此可作为高纤维食品配料。菊粉低聚糖作为功能性低聚果糖,能够增殖双歧杆菌的同时使有害菌显著减少,改善人体菌群分布,具有调节微生态平衡和促进健康的特性。本文综述了菊粉低聚糖的物化性质、应用、生产工艺,以及婴儿配方乳中添加低聚糖的技术现状。

Abstract

Jerusalem Artichock, also known as Jerusalem artichoke and Guizi ginger, is a perennial herbaceous Compositae. It is a characteristic agricultural crop in our country. It has strong soil adaptability and can be used in non-cultivable marginal areas such as tidal flats, wetlands along the river, hilly areas, and arid areas. Land planting. Jerusalem artichoke tubers are rich in inulin, which is the plant#39;s second largest stored polysaccharide, second only to starch. As the development direction of the important and deep processing of Jerusalem artichoke inulin, FOSs degrade the beta;(1→2) glycosidic bonds in the inulin molecule by endo-inulinase to obtain high value-added fructooligosaccharides. As a representative of prebiotics, oligofructose is a natural water-soluble dietary fiber and does not cause precipitation problems. It is very convenient to use inulin as a fiber ingredient, which can improve the sensory properties and help the human body to obtain a more balanced diet, so it can be used as a high-fiber food ingredient. As a functional oligofructose, inulin oligosaccharides can proliferate bifidobacteria and significantly reduce harmful bacteria, improve the distribution of human flora, and have the characteristics of regulating micro-ecological balance and promoting health.In this paper, the physical and chemical properties, application, production process of inulin oligosaccharides and the technical status of adding oligosaccharides into infant formula were reviewed.
