3D巧克力打印机加热与挤出装置设计
摘 要
近年来,随着经济与科技的迅速发展,各行各业的工业化水平都在不断提高,食品加工行业也不例外,3D打印技术也随之兴起。相较于普通食品加工,3D食品打印配料更加科学,口味丰富,外观也更精致,而且3D食品打印机体积小,速度快,更加方便。但3D打印技术起步较晚,仍有许多问题需要研究。
本课题主要对3D巧克力打印机 加热与挤出装置技术发展现状进行研究分析,并在此基础上设计制作一台3D巧克力打印机样机试验调试。主要研究内容是:在挤出装置方面,针对巧克力的材料特性,设计了推杆挤出装置、螺杆挤出装置和气动挤出装置三种满足巧克力特性的挤出方式。在加热装置方面,温度控制对巧克力打印也非常重要,本设计主要对挤出头和底面平盘两处进行温度控制,并测试加热效果。最后,制作了3D巧克力打印机样机,并对加工效果进行测试分析。

The Design of 3D Chocolate Printerrsquo;s Heating and Extrusion Device
Abstract
In recent years,with the rapid development of economy and technology,the level of industrialization in various industries is gradually improving,the food processing industry is no exception,3D printing technology also will be popular.Compared to ordinary food processing,3D printing food has more scientific ingredients,richer tastes and exquisite appearance.Besides,the 3D food printer is small in size,fast in speed and more convenient.However,the 3D printing technology is a new technology,there are many problems remained to be explored.
In this paper,3D chocolate printerrsquo;s heating and extrusion devicersquo;s development status is studied in detail,and on this basis,we design a prototype for testing.The main contents are as follows:In food extrusion device,for the chocolate has various characteristics,we design the pusher extrusion device,screw extrusion device and pneumatic extrusion device which satisfy the chocolate character for conveying material.In heating device,the control of temperature is of great significance for chocolate printing.The design is used to control the temperature of the extrusion head and the bottom of the flat-panel.Finally,we make the 3D chocolate printing prototype and test the processing effect.
